The criteria of Vietnam travel festival cuisines

The criteria for festival food evaluation is quite strict; it is qualified when you satisfy these following requirement:

  •    The quantity of dishes is an odd number, such as three bowls and five plates.
  •    The food, like other Southeast Asian countries, emphasizes the balance of yin and yang elements. Some food is considered as yin means cold such as seafood, so the seafood dish is always served with chili, ginger, and lemongrass which is regarded as yang (means hot).
  •    Each plate has its herb vegetable which creates the differentiative flavor.

A dish of Made-from-rice cake: ‘’Banh Chung’’ cake or Steaming sticky rice, created by Vietnamese godfather over 2 thousand years ago. For breakfast, we have a habit of having breakfast outside with several thousand vendors and local food stores in every corner throughout Vietnam for the whole day. The locals’ favorite dishes are all types of Vietnamese noodle soups, ‘’Banh mi’’ – Vietnamese sandwich and Steaming rolls with minced pork meat. These 3 street foods are super tasty and convenient for the local to access or take away.

About noodle soup, we also called ‘’Pho’’, it has a hundred versions with differentiative flavor in 64 Vietnam provinces. Some popular noodle types we always use are rice-noodle, vermicelli, glass-noodle, and wheat-noodle. Infact, we still eat that with beef, chicken or seafood. To have a unique-flavor-broth, the local artists need to use 10-15 different ingredients, including beef ribs, grilled ginger, cinnamon, black pepper, star anise, etc…to make it soft and aromatic.

In the main meals, the favorite menu for Vietnam Travel should be A bowl of soup, a plate of stir-fried seasonal vegetables, a plate of boiling pork meat or fried pork meat and a plate of fish or prawn. With regarding the bowl of soup, the locals have many version such as crab soup with tomatoes, sour minced-pork-meat soup with vegetables, soup of potatoes, carrots with beef, soup of green pumpkin with sparerib, etc.
